Basically, after entering the list of protected products, "Telemeaua de Sibiu" will only be produced by those authorized in this regard and will be displayed on a shelf with a special logo. The Ministry of Agriculture thus wants to protect real producers from those who falsify dairy products.
Telemeaua de Sibiu is a semi-hard cheese, made entirely from freshly milked, unpasteurized sheep's raw milk, by enzymatic freezing with clots. It is marketed fresh or ripe, and the maturity period is at least 21 days. The milk used to make the product "Telemea de Sibiu" comes from animals that are kept in a geographically restricted area and are fed mainly on grasslands. All factors related to how to care for and feed animals, as well as local processing techniques determine the specificity of milk as a raw material and contribute to ensuring the characteristics and quality of "Telemea de Sibiu" products.
The producer association "Telemea de Sibiu", consisting of ten legal entities located in a specified geographical area, wants to get official European recognition to protect their traditional recipes and to offer consumers natural and healthy products.
Romania has seven products listed on the European quality system: Topoloveni plum magician – PGI (2011), Salam de Sibiu – PGI (2016), Smoked Novac from Bârsei Country – PGI (2017), Scrub Danube Scrub – PGI (2018), Sausages Pleșcoi (2019) and Telemea de Ibănești Designation of Protected Origin (2016), Telemea de Sibiu – Protected Geographical Indications.
